Zucchini Cake

Ingredients
- •2 cups all-purpose flour
- •1 1/2 teaspoons baking powder
- •1/2 teaspoon baking soda
- •2 teaspoons ground cinnamon
- •1/2 teaspoon ground nutmeg
- •1/2 cup vegetable oil
- •1 cup granulated sugar
- •2 large eggs
- •2 cups shredded zucchini, squeezed dry
- •1/2 cup chopped walnuts
- •8 oz cream cheese, softened
- •1/4 cup butter, softened
- •1 1/2 cups powdered sugar
Directions
- 1Preheat oven to 350°F and grease a 9x13 inch baking pan.
- 2Whisk together flour, baking powder, baking soda, cinnamon, and nutmeg in a bowl.
- 3In another bowl, beat oil and sugar together, then add eggs one at a time, beating well. Fold in zucchini and walnuts, then gently fold in flour mixture until just combined.
- 4Pour batter into prepared pan and bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
- 5Cool cake completely in the pan.
- 6For frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar and beat until fluffy.
- 7Spread frosting over cooled cake and refrigerate before serving.
